The use of blockchain technology for the protection of Italian coffee heritage

Where does the coffee that makes up the blend I am enjoying come from? What are the distinctive characteristics of this beverage and how do they develop? How are the components selected, the beans roasted, and the quality evaluated? Imagine that simply scanning a QR code with your smartphone could answer these questions.

We have decided to involve our customers in the production process, from the purchase of green coffee to the finished product. All of this is made possible through the use of blockchain technology, which ensures traceability and transparency, immersing the consumer in the daily reality of a coffee roastery.

Thanks to the TrackIT project by the ICE Agency (Agency for the promotion abroad and internationalization of Italian companies) and the work of the Service Provider EZ Lab, we have been able to reconcile traditional production – that of roasted coffee – with digital innovation.

The structure of the blockchain has allowed Musetti to trace the production phases of the Gentile 18-piece coffee pods, ensuring that the information cannot be altered or tampered with over time. We have decided to document our work in a transparent manner, making all the information that the company possesses available to the consumer. For this reason, we have not created new recipes or established specific agreements with green coffee suppliers, but we have published documents attesting to the quality of the coffee we purchase, the origin of the beans, and the long transportation by ship.

For Musetti, being transparent means documenting the processes that take place daily in the company. The blockchain allows us to tell you about them, to make you part of the journey that coffee takes, from the plant to the cup.

The blockchain is also essential to demonstrate the careful process of selection and validation of coffees by the cupping team, which uses numerous descriptors to ensure that the standards are always met. This is followed by roasting, a skillful slow cooking process in which time and temperature generate the crispness and aromatic bouquet typical of roasted beans. These stages allow us to offer you a consistent sensory profile, so you can always find the same taste of your favorite blend, cup after cup.

The blockchain technology seals the documents attesting to all the described steps, making them immutable. Traceability and transparency become guarantees of product security and absence of counterfeiting: the declared information must correspond to reality.

But what is meant by “blockchain technology”?

Uploading data and documents to the blockchain means storing them in a “chain of blocks.” Each piece of information is saved in an encrypted form and is associated with the date and time when a specific operation, called a “transaction,” was performed. This digital ledger is not a typical database, as there is no central entity controlling it. Instead, it is a distributed system in a network of peers, where each participant possesses a copy of all the data. Therefore, for a transaction to be recorded in the blockchain and made immutable, all the peers must approve its reliability.
